Hmm.. good question. It would probably alter the consistency of the ice cream. I actually made a pretty big mistake but it turned out great. I used 4 egg whites before realizing it said egg YOLKS and then did the 5th egg correctly. I'm just so used to using egg whites in cakes, etc. instead of going for egg yolks. I thought for sure that it would mess up the recipe completely and make it too watery and not thick enough. Luckily, no harm done! And I guess it's a tad bit healthier. Since it's only 1 cup of heavy cream, maybe you could do something like 1/2 cup of heavy cream and make the rest up with half and half. Maybe you could even use whole milk. No harm in playing around with it and seeing what you get! The only ingredients that are particularly pricey are the spices, but those are great to have around the house anyway.

I wonder if you can substitute something for the heavy cream. It looks yummy but heavy cream tears up my tummy.
